fumet de poisson<\/li><li>200g de poisson blanc type lieu ou merlu sans parures et sans ar\u00eates, coup\u00e9 en cubes<\/li><li>20g + 70g de beurre pour la sauce<\/li><li>70g de farine<\/li><li>5cl de cr\u00e8me liquide<\/li><li>2 blancs de poireaux lav\u00e9s et \u00e9minc\u00e9s tr\u00e8s finement<\/li><li>1 jus + 1 zeste de citron frais<\/li><li>50g de chapelure fine<\/li><li>Sel fin et poivre du moulin<\/li><\/ul>\n\n\n\n<h3 class=\"wp-block-heading\"><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-cyan-blue-color\">Mise en \u0153uvre :<\/mark><\/h3>\n\n\n\n<ol class=\"wp-block-list\"><li>Faire chauffer le court-bouillon<ol><li>Plonger les cubes de poisson <em>(cuit plus longtemps que les noix de Saint-Jacques)<\/em><\/li><li>Plonger les noix de Saint-Jacques<\/li><li>Laisser cuire environ 6 minutes.<\/li><li>\u00c9goutter les morceaux de poisson et de Saint- Jacques<\/li><li>D\u00e9poser-les dans une assiette.<\/li><li>Ne pas jeter le bouillon.<\/li><\/ol><\/li><li>Faire fondre le beurre dans une sauteuse chaude<ol><li>Ajoutez les poireaux<\/li><li>Salez et laissez fondre doucement.<\/li><\/ol><\/li><li>Verser le beurre dans un casserole et laisser fondre<ol><li>Ajouter la farine et m\u00e9langer pour faire un roux<\/li><li>Cuire quelques minutes<\/li><li>Verser petit \u00e0 petit du bouillon de poisson jusqu&rsquo;\u00e0 \u00e9paississement, environ 5 minutes<\/li><li>Ajouter la cr\u00e8me et le jus de citron<\/li><\/ol><\/li><li>Dans les coquilles pr\u00e9alablement pos\u00e9es et stabilis\u00e9es sur une plaque de cuisson<ol><li>D\u00e9poser une cuiller\u00e9e de fondue de poireaux<\/li><li>Mettre les morceaux de poisson et de noix de Saint-Jacques au-dessus<\/li><li>Napper ensuite de sauce<\/li><li>Saupoudrer de chapelure<\/li><li>Ajouter 1 \u00e0 2 petites noix de beurre<\/li><\/ol><\/li><li> D\u00e9poser les coquilles sur sous le gril et faire gratiner 5 minutes.<\/li><li>A la fin de la cuisson, ajouter le zeste de citron sur les coquilles gratin\u00e9es<\/li><\/ol>\n\n\n<div class=\"wp-block-buttons is-layout-flex
